Vegetarian sweet and sour cabbage soup

I made a very tasty soup this weekend. This recipe is not exact as I didn’t write much down. Will make about 5qts I would guess, so more then a gallon. Tailor the sweet, sour and tomato etc for your taste.

Vegetarian Sweet and Sour Cabbage Soup

2 onions, thinly sliced

6 cloves garlic, chopped or pressed

1-2 Tbl ginger, chopped or grated

2-3lbs ripe tomatoes, chopped (could use 2 cans stewed or chopped tomatoes instead)

3-4 carrots, peeled and diced

1 green or red cabbage, thinly sliced

1 cup golden raisins (optional)

1/4 cup vegetable or olive oil

1  1/2  cup red wine (optional)

1/3 cup balsamic vinegar (or cider, red wine etc)

2-3 bay leaf

1 tsp thyme

1 tbl paprika

1/2 tsp cardamon

1/4 tsp clove

water or stock likely 8-10 cup

1 can tomato paste

In a  large pot heat oil over medium heat. Add onions, garlic and ginger saute stirring until onions are translucent and begin to brown. Add in tomatoes and carrots and cook for 5 min over medium heat. Add cabbage, wine, vinegar, brown sugar, raisins and spices. stir well and top off with water until cabbage is floting and it looks brothy. Cover and simmer over low-medium heat for 1 hour.

Stir in can of tomato paste and taste for season adjustment, add salt and pepper and more sugar or vinegar as needed. Cover and simmer for an additional 20-30 min. Taste once more and adjust if needed. Can also add more water/stock at anytime for the consistency desired.

Serve in a bowl with bread and we topped ours with a fresh horseradish and sourcream mix.

Hold excellent and is better the next day, freezes well also.
