Brussel Sprouts, Figs and Gorgonzola

I made this yesterday and it was very tasty, enough that I ate all the left overs this morning. I had gotten the brussel sprouts from the farm.Last year the farm had a bumper crop of sprouts and I had to devise many ways to consume as I don’t fancy them much. A few weeks ago I was in line at TJ’s (trader joes) and somehow ended up chatting with the guy in line before me. (my son comments how I am always talking to people at TJ’s) He told me he was making brussel sprouts and figs, I was intrigued. I did some research and found this recipe.

I was expecting some guests who were vegetarians so that wasn’t going to fly I instead did this and am glad it turned out.

Brussel Sprouts, Figs and Gorgonzola

1                          red onion, sliced

1 Tbl                   oil

1 lb                      brussel sprouts, trim the bottom and thinly slice

1/2 cup             dried figs, quartered

1/3 cup             water

salt and pepper to taste

1/4 cup            crumbled Gorgonzola, (Italian blue cheese)

In a pan heat oil over medium heat, add onions. Sautee onions until they begin to brown. Add figs and sprouts and water. Stir well, reduce heat and cover pan. Cook 5 minutes until tender. Season.

Place in serving dish and sprinkle with cheese.
