Summer in December

With classic Chicago wintery mix of snow, rain and sleet, I thought some memories of summer would serve us well. Made a dinner of braised beef ribs, green salad, rice and fresh lemonade.  The beef ribs I tossed in the slow cooker with 2 cups of my Garden Tomato Sauce and 1/2 cup of water. let it go for 7 hours on low or until fork tender. Remove ribs and place in preheated oven to crisp up a bit. Meanwhile de-fat cooking liquid and place in pan with 1/2 cup of favorite BBQ sauce. Bring to a simmer and cook for 10 minutes or so. Remove ribs from 400 degree oven once a little crisp.  Serve with rice, sauce, green salad and lemonade. A great way to be reminded summer days will return.
