Green Tomatoes

Its October, but with the warm weather we have had this month, my plants still keep producing. I have so many green tomatoes, that I’ve started researching some recipe ideas. As I develop them I’ll be sharing. I had found a  green tomato rice recipe and made my version lats night.

Green Tomatoes with Rice

5 slices                    thick cut bacon, diced small

1 large                      sweet onion, diced

4 cloves                  garlic, minced or pressed

3-4 cups                 chopped green tomatoes

3 sprigs                   fresh rosemary, minced (or thyme, or sage, or basil etc)

1 small                    fresh red thai hot pepper, minced

1.5 cups                  rice

4 cups                     liquid (water, stock , etc)

1 can                        chickpeas, drained and rinsed

salt and pepper

1/2 tsp.                    ground cardamom

Saute bacon over medium heat until crispy. Add garlic and onions and cook until onions are translucent. Add fresh rosemary and hot pepper and cook 30 seconds. Add tomatoes and cook additional 1-2 minutes. Add rice and cook for 1-2 minutes. Add remaining ingredients and cover. Cook over low-medium heat until most liquid absorbed and rice is tender, (about 20-30min).
