Apple-Raspberry Pie

Today I made a tasty pie. I had apples getting all wrinkly and raspberries were 2 pints for 95 cents , so its apple raspberry pie. This was a quick throw together pie with what ever was lying around. I used some guava jelly I had in the pantry as I was low on sweeteners. I had some deep dish pre-made frozen pie crust but of course homemade always better.

Apple Raspberry Pie

6                           apples-peeled, cored and thinly sliced

2 cup                  raspberries, fresh or frozen

3-4 inch             ginger, peeled and grated

1 cup                  guava jelly, can use apricot or any other flavor

1/2 cup             sugar, cane granulated

3 Tbl.                  corn starch

1 Tbl.                    cinnamon, ground

2 deep dish pie crust

vanilla sugar (optional)


Toss together apples, raspberries, jelly, sugar, flour and cinnamon. Pile into a deep dish pie sheel and top with another pir crust . pinch edges and some slits on top for venting. Bake at 350 for 1 hour on a cookie sheet until brown and bubbling.

Remove form oven and cool minimum 30 minutes before serving.
