Peppermint Chocolate Chip Cookie

I’ll be honest mint not my favorite baking ingredient but many people love these cookies. They have been compared in taste to thin mints the Girl scout cookie. I like a cookie with a little more texture so I add some flax seed meal to these. It’s good for you and adds a little more heartiness to the cookie.You can omit the peppermint extracts and have a tasty regular chocolate chip recipe.

Peppermint Chocolate Chip Cookie

bake in 350 degree oven makes about 3 dozen

  • 1 lb                                  unsalted room temperature butter
  • 1.5 cup                           granulated cane sugar
  • 1 Tbl.                               unsulphured molasses
  • 4                                        whole eggs
  • 1/4 cup                          oil (canola, safflower, vegetable)
  • 1 tsp.                               vanilla extract
  • 1 tsp.                               peppermint extract (I use organic)
  • 4 cup                               flour
  • 1/2 cup                          flax seed meal
  • 1/2 tsp.                          baking powder
  • 1/2 tsp.                          baking soda
  • 1 tsp.                               sea salt.
  • 12oz bag                        milk chocolate chips or chunks

In a bowl mix together flour, flax, salt, baking powder and baking soda, set aside. In a mixer, cream together butter, molasses and sugar. Once light and fluffy add egg , oil, vanilla and peppermint. Mix well.

In small batches add the dry ingredients until all are incorporated. I prefer to allow the dough to chill for an hour or so.

Using a spoon place mounds onto a sheet pan and press top lightly. Bake in preheated over for 13-15 min. Until cookies are brown on edges and light brown on top. Remove from over, allow to cool on pan for 5 min then remove and cool on a rack.
