C3-Chocolate Bomb Cookie

I love this cookie. Its crisp yet chewy in the center. I add a little cardamon which balances so well with all the chocolate flavors. These cookie are really good as an ice cream sandwich base. For the chocolate you can do a mix of whatever you like. This time I did a mix of milk, dark and cocoa nibs. Feel free to add some white chocolate in the mix.

C3-Chocolate Bomb Cookies

bake in 350 degree oven makes about 3 dozen

  • 1/2 lb                                  unsalted room temperature butter
  • 1.5 cup                           granulated cane sugar
  • 1 Tbl.                               unsulphured molasses
  • 4                                        whole eggs
  • 1/4 cup                          oil (canola, safflower, vegetable)
  • 1 Tbl.                               vanilla extract
  • 3/4 cup                          cocoa powder
  • 3 cup                               flour
  • 1/2 tsp.                          ground cardamon
  • 1 tsp.                               baking soda
  • 1 tsp.                               sea salt.
  • 2 cups                             at least 2 kinds of chocolate chips or chunks

In a bowl mix together flour, cardamon, salt, cocoa powder and baking soda, set aside. In a mixer, cream together butter, molasses and sugar. Once light and fluffy add eggs ,oil and vanilla. Mix well.

In small batches add the dry ingredients until all are incorporated. Add chocolate last and mix well.

I prefer to allow the dough to chill for an hour or so.

Using a spoon place mounds onto a sheet pan and press top lightly. Bake in preheated over for 13-15 min. Until cookies are puffed and spread out. Remove from over, allow to cool on pan for 5 min then remove and cool on a rack.
